📝 Ingredients (Serves 2–3)

  • 1.5 sheets of gelatin
  • 85g dark chocolate
  • 120g milk
  • 15g sugar
  • 150g heavy cream
  • A few strawberries for garnish
  • A bit of chocolate for garnish

🍳 Instructions

  1. Soften the gelatin
Soak the gelatin sheets in cold water for 5–10 minutes until fully softened.
  2. Prepare the chocolate
Finely chop the dark chocolate and place it in a heatproof bowl.
  3. Heat milk & cream
In a saucepan, combine milk, heavy cream, and sugar. Heat over medium heat until it just begins to simmer (do not boil).
  4. Add gelatin
Squeeze out excess water from the softened gelatin and add it to the hot mixture. Stir until completely dissolved.
  5. Melt the chocolate
Pour the warm milk mixture over the chopped chocolate in 2–3 additions, stirring gently each time until smooth and fully melted.
  6. Strain and chill
Strain the mixture through a sieve for a silky texture. Pour into cups or molds and refrigerate for at least 3 hours until set.
  7. Decorate
Top with fresh strawberries, chocolate shavings, or any garnish you like before serving.

💡 Tips

  • No need to whip the cream – this method creates a naturally smooth and creamy mousse.
  • For best results, use chocolate with 60–70% cocoa for deep flavor.
  • Straining the mixture removes lumps and gives a professional finish.
