This strawberry rare cheesecake is a refreshing, no-bake dessert perfect for warm days. A nutty whole wheat cookie base is topped with a creamy mousse made of yogurt, cream cheese, and fresh cream. 📋Ingredients (for 18cm round mousse ring)

[Base]

  • Whole wheat cookies 120g
  • Brown sugar 10g
  • Pinch of salt
  • Butter 60g

[Cheese Cream]

  • Cream cheese 190g
  • Sugar 70g
  • Plain yogurt 120g
  • Heavy cream 200g (unwhipped)
  • Sheet gelatin 7g (soaked in cold water for 10 minutes)

[Decoration]

  • Fresh strawberries, as needed

🧁Instructions

  1. Make the base
    • Crush the cookies finely (use a zipper bag and a rolling pin).
    • Add brown sugar, salt, and melted butter. Mix well.
    • Press the mixture firmly into the bottom of a mousse ring.
    • Chill in the refrigerator while preparing the filling.
  2. Make the cheese cream
    • Soak the sheet gelatin in cold water for at least 10 minutes.
    • In a bowl, soften the cream cheese and mix in the sugar until smooth.
    • Add the yogurt and mix well.
    • Add the unwhipped cream and gently combine.
    • Melt the soaked gelatin completely in a microwave or over a double boiler.
    • Take a small portion of the cheese mixture and mix it with the melted gelatin to temper.
    • Then pour the tempered gelatin mixture back into the main batter and mix quickly and evenly.
  3. Assemble
    • Pour the cheese mixture over the chilled cookie base.
    • Smooth the surface and chill in the refrigerator for at least 4 hours until fully set.
  4. Decorate
    • Clean and dry the strawberries. Slice or leave whole and decorate the top of the cake just before serving.
