Ultra-Fudgy Brownies
If you love rich, dense brownies that almost melt in your mouth, this recipe is for you. With deep dark chocolate flavor, a subtle caramel note from brown sugar, and a smooth, chewy texture, these brownies deliver that perfect fudgy bite.
✅ Ingredients (for one 19cm square pan)
- Dark couverture chocolate: 225g
- Unsalted butter: 85g
- Brown sugar: 200g
- Salt: 1g
- Eggs: 125g (about 2–2.5 large eggs)
- Vanilla extract: 2g
- All-purpose flour: 65g
✅ Instructions
- Melt chocolate and butter
- Place dark chocolate and butter in a heatproof bowl and melt gently over a double boiler.
- Stir until completely smooth and set aside.
- Mix eggs and sugar
- In a separate bowl, whisk together brown sugar, eggs, salt, and vanilla extract until the sugar begins to dissolve. (Do not whip too much; just combine.)
- Combine mixtures
- Add the melted chocolate-butter mixture to the egg mixture and mix until smooth.
- Add flour
- Sift in the flour and fold gently with a spatula. Avoid overmixing.
- Pour and bake
- Line a 19cm square pan with parchment paper, pour in the batter, and smooth the surface.
- Bake in a preheated oven at 160°C (320°F) for 17 minutes.
- Cool completely
- Let the brownies cool fully in the pan before cutting them into squares.

- For the best fudgy texture, let the brownies rest for several hours or overnight before slicing.
- Baking times may vary slightly depending on your oven. The ideal doneness is when the center is just set, and a toothpick inserted comes out with moist crumbs (not raw batter).
- Use chocolate with at least 70% cocoa for an even richer flavor.
