🥨 Sablé Breton Recipe
Sablé Breton is a traditional French butter cookie that comes from the Brittany region. With its rich, salty-sweet flavor and crisp yet tender texture, it’s a perfect treat to enjoy with coffee or tea.
🧈 Ingredients (Makes about 6–8 cookies)
- 40g egg yolk
- 80g sugar
- 1g salt
- 80g unsalted butter (softened)
- 113g cake flour
- 3.5g baking powder

- Cream the butter
In a mixing bowl, cream the softened butter with sugar and salt until smooth and fluffy. - Add the egg yolk
Mix in the egg yolk until well combined. Be careful not to overmix. - Fold in dry ingredients
Sift in the cake flour and baking powder. Gently fold the mixture with a spatula until a dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour. - Prepare the rings
Roll out the dough to a thickness of 2cm. Lightly butter the inside of 6.5cm perforated rings, then coat the inner sides with sugar. Use the rings to cut out the dough and leave it inside the ring. - Bake
Place the rings with the dough directly onto a baking tray, and bake in a 165°C (convection) oven for about 18 minutes. Baking with the rings ensures that the cookies hold their shape and develop a beautifully defined edge. - Cool and unmold
Once baked, let the cookies cool completely on a wire rack before gently removing the rings.
