[Ingredients] (Makes about 15 Cookies)

  • Unsalted butter 225g
  • White sugar 140g
  • Brown sugar 170g
  • Egg 100g
  • Vanilla extract 5g
  • Baking soda 5g
  • Salt 7g
  • All-purpose flour (medium strength)
  • Chocolate chips 180g
  • Nuts 180g

[Instructions]

  1. Cream the butter.
Place softened butter in a mixing bowl and beat until smooth and creamy.

2. Add the sugars.
Add white and brown sugar, and mix until the mixture becomes light and fluffy.

3. Incorporate eggs and vanilla.
Add the eggs in two parts, mixing well after each addition. Add the vanilla extract and mix until fully combined.

4. Sift in the dry ingredients.
Sift in the flour, baking soda, and salt. Gently fold with a spatula just until no dry flour remains. Do not overmix.

5. Mix in the chocolate chips and nuts.
Add chocolate chips and chopped nuts, and fold until evenly distributed throughout the dough.

6. Portion and chill the dough.
Divide the dough into 80g portions and place them on a tray.
Cover and refrigerate for about 1 hour. This helps the dough firm up and enhances the cookie’s shape and texture when baked.

7. Flatten before baking.
Once chilled, gently press each portion to flatten slightly before placing them in the oven.

8. Bake.
Bake in a preheated oven at 170°C (340°F) for 15 minutes.
The cookies should have crispy edges and a soft, chewy center — just the way we love them!

[Tips]

  • Chill the dough to prevent overspreading.
  • Don’t skip the flattening step before baking!
  • Store in an airtight container for up to 4 days.
