- Almond liqueur: 3g (optional)
🍳 Instructions
- Make brown butter (beurre noisette)
In a small saucepan, melt 75g of butter over medium heat.
Keep heating until it turns golden brown and gives off a nutty aroma.
Strain it through a fine sieve and let it cool.

In a bowl, combine 26g cake flour, 26g almond powder, and 75g sugar.
Sift the dry ingredients for a smoother texture. - Whisk egg whites and vanilla
In another bowl, gently whisk together 63g egg whites and the seeds from 1/2 vanilla bean.
just mix until combined. - Combine wet and dry ingredients
Add the egg white mixture to the dry ingredients and gently fold together.
Be careful not to overmix. - Add brown butter
Slowly pour the cooled brown butter into the batter while stirring.
Also add 6g of heavy cream and 3g of almond liqueur (optional).
Mix until just combined. - Rest the batter
Cover the batter and refrigerate for at least 1 hour.
Resting helps improve both flavor and texture. - Bake
Fill financier molds about 80–90% full.
Bake in a preheated oven at 180°C (356°F) for 13–15 minutes until golden brown.
The outside should be crisp while the inside stays moist.
