  • Egg whites: 63g
  • Vanilla bean: 1/2 piece
  • Sugar: 75g
  • Cake flour: 26g
  • Almond powder (almond flour): 26g
  • Butter: 75g
  • Heavy cream: 6g
  • Almond liqueur: 3g (optional)

🍳 Instructions

  1. Make brown butter (beurre noisette)
    In a small saucepan, melt 75g of butter over medium heat.
    Keep heating until it turns golden brown and gives off a nutty aroma.
    Strain it through a fine sieve and let it cool.
    → This step is key for the signature flavor of financiers.
  2. Mix dry ingredients
    In a bowl, combine 26g cake flour, 26g almond powder, and 75g sugar.
    Sift the dry ingredients for a smoother texture.
  3. Whisk egg whites and vanilla
    In another bowl, gently whisk together 63g egg whites and the seeds from 1/2 vanilla bean.

  4. Combine wet and dry ingredients
